SPICED CUCUMBER RINGS 
1ST DAY:

Peel, slice 1/4 inch thick 2 gallons of large cucumbers. Remove seeds. Soak in lime water, 24 hours: 2 cups lime and enough water to cover.

2ND DAY:

Rinse well. Soak 3 hours with clear water. Drain. Mix:

1 tsp. alum
2-3 oz. red food coloring
1 c. white vinegar
Enough water to cover

Simmer 2 hours. Drain and throw away liquid.

Mix:

2 c. water
8 c. sugar
2 c. vinegar
1 lg. bag cinnamon hearts
8 sticks cinnamon

Bring to boil (make sure candies are melted). Pour over cucumbers, let stand for 24 hours.

3RD DAY:

Drain. Reheat syrup. Pour over cucumbers.

4TH DAY:

Repeat third day instructions.

5TH DAY:

Reheat syrup. Pack cucumbers, pour hot syrup over cucumbers. Seal.
