SCALLOP POTATOES 
6 c. thin potato slices
2 tbsp. butter
2 tbsp. flour
2 c. milk
1 tsp. salt
1/8 tsp. pepper
1/2 c. green onion
2 c. shredded sharp cheddar

TOPPING (if desired) :
1 1/2 c. bread cubes
1/4 c. butter
1/4 c. Parmesan cheese

Arrange potatoes in a greased baking dish. Make white sauce with butter, flour, milk and seasonings. Add green onion and cheese. Stir until cheese melts. Pour over potatoes. Cover and bake at 350 degrees for 1 hour. Remove cover. Top with topping, if desired. Finish baking 30 minutes or until tender.
