BANANA NUT CAKE 
2 c. flour
1 tsp. baking soda
1/2 c. shortening
1 1/2 c. sugar
2 eggs
3 ripe bananas
4 tbsp. buttermilk
1 tsp. vanilla
1/2 c. chopped pecans
Pinch salt

Cream shortening and sugar. Add eggs and blend, then add bananas and mix. Add milk alternately with a mixture of the flour, soda and salt. Mix well and add vanilla and nuts. Bake at 350 degrees for about 25 minutes or until done. Bake in 2 layer pans or a large rectangular pan that has been greased and floured.

BANANA ICING:

1/4 lb. butter (1 stick)
1 lb. powdered sugar
2 small ripe bananas
Pinch salt
1 tsp. vanilla
1 c. chopped pecans

Cream butter and sugar. Add mashed bananas, salt and vanilla. Add pecans. May need little more powdered sugar. Ice cake and refrigerate. Freezes well.
