BANANA - NUT CAKE 
1 c. vegetable shortening
2 1/2 c. sugar
3 c. sifted plain flour
1 1/2 tsp. baking soda
1 tsp. salt
4 eggs, separated
6 tbsp. buttermilk
2 tsp. vanilla
2 c. mashed ripe bananas
1 c. pecans, chopped

Cream shortening and sugar. Sift dry ingredients together and add alternately with beaten egg yolks and buttermilk. Add vanilla, bananas and pecans. Fold in beaten egg whites. Bake in large greased pan at 350 degrees for about 1 1/2 hours.
