MOCK WHIPPED CREAM 
1 1/2 tsp. unflavored gelatin
1/4 c. boiling water
1 1/2 tsp. honey
1 c. ice water
1/2 c. nonfat dry milk
2 tsp. vanilla extract

Chill a large bowl and beaters. Dissolve gelatin in boiling water. Stir in honey.

In chilled bowl, beat together ice water, nonfat dry milk and vanilla until very frothy. Gradually add gelatin mixture and continue beating until quite stiff. Chill for at least 1 hour before using.

This will keep in the refrigerator for about a day.
