APPLE JELLY 
1 env. or 1 tbsp. unflavored gelatin
3 c. unsweetened apple juice
2 tbsp. liquid artificial sweetener
2 tbsp. lemon juice
3 drops yellow food coloring
3 drops red food coloring

Soften gelatin in 1/4 cup apple juice. Heat 2 3/4 cups apple juice with liquid artificial sweetener, lemon juice, and food coloring. Stir in softened gelatin. Bring to a boil. Pour into sterilized half pint jars. Cover tightly. Refrigerate. Yield: about 2 pints.

TIP: For a more "jelly-like" flavor, add 1/2 bottle (6-7 tablespoons) fruit pectin. Boil 1 minute.
