HIGHLAND BERRY PIE (A TART NEW ENGLAND PIE) | |
Pastry for 1-crust pie 1 c. cranberries 1 c. blueberries 1/2 c. water 1 c. sugar Pinch of salt 3 tbsp. flour 1 tsp. vanilla 1. Preheat oven to 350 degrees. 2. Line 8 or 9 inch pie plate with pastry. 3. In pan, combine cranberries, blueberries and 1/4 cup of the water. Bring to a boil, then simmer for 10 minutes, or until cranberries burst. Stir in sugar and salt. 4. Combine remaining 1/4 cup water and flour. Stir into cranberry mixture and cook for three minutes, stirring constantly. 5. Remove from heat, stir in vanilla. Pour into pie plate. 6. Bake for 25-30 minutes. |
