CREAMY CHEESE ENCHILADAS 
3 c. shredded Jack cheese
6 tbsp. chopped green onion
Optional: Raw mushrooms chopped in quarters or chopped (cooked)
Chicken pieces

SAUCE:

1/4 c. butter (melted)
1/4 c. flour
2 c. chicken broth
1 c. sour cream
1 (4 oz.) can diced Ortega chiles

Fill tortillas with cheese mixture. Roll and place in baking pan (usually an 8x8 inch will do).

Melt butter in saucepan. Add flour, mix. Stir in chicken broth - makes a thick sauce.
