SPANISH RICE 
2 onions, sliced thin
2 tbsp. butter
1 c. washed rice
3 c. boiling water
2 green peppers, parboiled, seeded and cut fine
1 c. canned or chopped tomatoes
1 tsp. salt
Pepper to taste
Chili powder if desired

Saute onions in butter until soft. Add rice and cook until lightly browned. Add other ingredients and cook slowly until rice is tender (about 40 minutes). Heat and serve from a casserole if you like. Serves 6.
