EASTER HAM LOAF | |
A great way to use leftover Easter ham! I use my Kitchen Aid with grinder attachment to prepare the meats. 3/4 lb. ground pork 3/4 lb. ground smoked ham 1 egg, beaten 1/2 cup moist breadcrumbs 1/2 cup milk 1/4 tsp. salt 1/4 tsp. pepper 1 (8 oz.) can pineapple slices Mix well together pork, ham, one well beaten egg, breadcrumbs and milk. Season with salt and pepper. Press evenly into a 10x10-inch casserole or cake pan. Bake for one hour in 350°F oven, uncovered. Remove from oven, pour off juices and brown pineapple slices in juice in a frying pan. BROWN SUGAR SYRUP: 1 cup brown sugar 1/4 cup cider vinegar 1/4 cup water 1/2 tsp. dry mustard While pineapple is browning, mix together brown sugar, cinder vinegar, water and dry mustard. Pour this syrup over ham loaf and return to oven at 350°F for at least 15 minutes. Arrange browned pineapple slices over loaf before serving. Submitted by: Cindy Roberts |
