SHRIMP JAMBALAYA | |
1 1/2 sticks butter 1 bunch parsley 1 bell pepper 1 onion 1 can Ro-Tel tomatoes 1 can onion soup 1 can cream of mushroom soup 2 c. uncooked rice 1 lb. uncooked shrimp (crawfish can be used instead of shrimp) 1 lb. crabmeat In large skillet, saut chopped onion, bell pepper and parsley in butter. Add Ro-Tel tomatoes, onion and cream of mushroom soup to the mixture. Stir in uncooked rice and season to taste (salt and pepper). Add shrimp and crabmeat to the mixture and mix well. Pour all into a greased 9 x 13 baking dish. Cover with foil and bake at 350°F for 1 hour and 15 minutes. Stir after 30 minutes and finish baking. |
