FUNNEL CAKES 
2 beaten eggs
1 1/2 c. milk
2 c. flour
1 tsp. baking powder
1/2 tsp. salt
2 c. cooking oil

Combine eggs and milk. Add flour, baking powder and salt. Beat until smooth with rotary beater. Heat cooking oil in 8 inch skillet to 350 degrees. Cover bottom of funnel with finger and pour a generous 1/4 cup batter into funnel. Remove finger and drizzle batter into hot oil in a spiral shape. Fry until golden, about 3 minutes. Turn carefully with wide spatula and tongs. Cook 1 minute longer. Drain on paper towel. Sprinkle with sifted confectioners' sugar. Serve hot with syrup. Serves 8.
