SPICY CACTUS SALAD 
1 (3 oz.) jar "Embassa" natural tender cactus
1/2 onion, chopped
1 lg. or 2 med. tomatoes diced
1 tbsp. El Toro oregano
Cilantro, freshly chopped, to taste
1/4 to 1/2 c. jalapeno slices (pickled with carrots)
1/2 c. finely shredded fresh cheese

Drain cactus and jalapeno and rinse well. Combine all ingredients in a large bowl.
