BRAN MUFFINS 
1 1/2 c. unprocessed wheat bran
1 c. whole wheat flour
1/2 c. raisins (opt.)
1 tsp. baking soda
2 tsp. baking powder
3/4 c. buttermilk
1/2 c. molasses or honey (or 1/4 c. of each)
2 tbsp. oil
1 egg, beaten

Stir together first 5 ingredients and set aside. Blend milk, molasses and/or honey, oil and egg; add to dry ingredients and stir just until moistened. Fill oiled muffin cups 2/3 full. Bake 15 to 20 minutes in 400 degree oven. Makes 1 dozen.
