BEST-OF-BRAN MUFFINS 
3 c. shredded bran cereal (All Bran, or 100% Bran, etc.)
1/2 c. vegetable oil
1 c. raisins
1 c. boiling water
2 eggs, slightly beaten
2 c. buttermilk
1/4 c. molasses
2 1/4 c. whole wheat flour
4 tsp. sugar
2 1/2 tsp. baking soda
1/2 tsp. salt, if desired

OPTIONAL:

May add 1 cup of any of these: diced apples, peaches, stewed apricots, blueberries, raspberries, pineapples, etc.

1. In large bowl, combine cereal, oil and raisins and pour boiling water over. Set aside to cool slightly.

2. In a small bowl, combine eggs, buttermilk and molasses. Add this to partly cooled cereal mixture.

3. In another small bowl, combine flour, sugar, baking soda and salt. Add to cereal mixture, stirring just enough to moisten dry ingredients. Add optional fruit if desired. Cover with plastic wrap and let stand 15 minutes to 1 hour.

4. Preheat oven to 400 degrees. Grease 24 muffin cups (or 12 Texas size muffin cups) and divide batter among them, filling each cup 3/4 full. Bake 20 to 25 minutes. Remove from oven, cool slightly, remove from tin and cool completely on rack. Makes 24 muffins.
