OAT BREAD 
3 1/2 c. boiling water
2 1/2 c. quick oats
1 c. honey
3 tbsp. salt
1 stick butter
3 pkg. yeast
1 c. warm (115 degree) water
4 slightly beaten eggs
12-13 c. flour

Combine first 5 ingredients. Cool to lukewarm. Dissolve yeast in the 1 cup water. Add to oat mixture. Add eggs. Mix well. Add 3 cups flour at a time. Mix well. Add enough flour so dough can be handled but not stiff.

On floured surface, knead 10 minutes. Place in a very large bowl (I use a hot water bath kettle), well greased. Cover. Let rise until double, in a warm, draft-free place. Punch down. Rise again.

Grease 5 loaf pans. Make loaves. Let rise double. Bake about 40-45 minutes in a 350 degree oven. Turn out immediately on wire racks. May butter tops while warm. Excellent for toast.
