SIMPLE CHAMPION SPONGE CAKE 
1 1/4 c. flour (sifting not necessary)
1 c. sugar
1/2 tsp. baking powder
1/2 tsp. salt
6 lg. eggs or 8 sm. eggs, separate eggs (whites in a large bowl, yolks in
a medium bowl)
1 tsp. cream of tartar
1/2 c. sugar
1/4 c. water
1 tsp. favorite flavoring

Mix together flour, 1 cup of sugar, baking powder and salt. In large bowl beat egg whites until frothy. Add cream of tartar. Gradually beat in 1/2 cup sugar until stiff, not dry peaks are formed.

In medium bowl combine egg yolks, water and dry ingredients. Beat at medium speed 4 minutes until light and fluffy. Fold gently into egg white mixture. Turn into 10 inch tube pan. Bake at 350 degrees about 45 minutes. Invert pan until cool. Be sure pan and bowls are free of grease!!
