ENCHILADAS OLE | |
1/2 c. chopped onion 2 tbsp. butter 1 (8 oz.) can tomato sauce 1 (4 oz.) can chopped green chilies, drained 1 (8 oz.) jar Cheez Whiz pasteurized cheese spread or Cheez Whiz spread with jalapeno peppers 6 tortillas Oil 1 (16 oz.) can refried beans Saute onion in butter. Add tomato sauce and 1/4 cup chilies, simmer 15 minutes. Stir in process cheese spread, heat thoroughly. Dip each tortillas in hot oil to soften. Spread tortillas with combined beans and remaining chilies, roll up. Place seam side down in 10 x 6 inch baking dish. Cover with sauce. Bake at 350 degrees for 25 minutes. Garnish with green pepper rings or black olive. Serve with sour cream. |
