QUICK TURKEY JAMBALAYA | |
1 c. chopped green pepper 1 c. sliced green onion with tops 1 tbsp. butter 1 1/2 c. turkey or chicken broth 2 c. boned, cooked turkey 1 tsp. poultry seasoning 1 c. sliced celery 1 clove garlic, crushed 1 c. uncooked rice 2 c. canned tomatoes Dash of red pepper Saute pepper, celery, onions and garlic in butter until tender. Stir in other ingredients. After bringing to a boil, reduce heat to simmer in covered pot. Simmer 20 minutes or until rice is tender and liquids are absorbed. Adjust seasoning and fluff lightly with fork before serving. Serves 6. |
