TANGY ORANGE ROUGHY 
1 lb. orange roughy fillets
Salt, pepper (optional)
1/2 c. plain yogurt (lowfat or nonfat)
1 tsp. Dijon mustard (optional)
1 green onion, chopped

Rinse and dry fish. Arrange in single layer in greased 9 x 13 inch baking dish. Sprinkle lightly with salt and pepper. Mix yogurt and mustard and spread over fish. Sprinkle onion on top. Bake in 350 degree oven until fish is just slightly translucent or wet inside (12 to 18 minutes). Serves 3-4.
