RAMIRO'S CALI CHICKEN 
1 cut-up chicken
1 lg. onion, sliced
1 lg. tomato, sliced
1 sm. green pepper, sliced
1 red pepper, sliced
2 med. potatoes, cubed
1/8 tsp. salt
1/8 tsp. black pepper
1/8 tsp. paprika
1/8 tsp. Adobo seasoning

Can be found in the Mexican-Hispanic food section in the supermarket.

Using a large frying pan, pour in 1 cup of water. Add to water one cut-up chicken. Place in pan slices of onion, slices of tomato, slices of green peppers and red peppers, and chunks of potatoes. Season with salt and pepper, Adobo seasoning and paprika. Cook on medium 40 to 50 minutes or until chicken is tender. Vegetables will be cooked down. Serve over rice.
