3 1/4 oz. pkg. tapioca pudding 2/3 c. orange juice 11 oz. can mandarin oranges, drained 8 oz. can pineapple chunks 3/4 c. milk 1 lg. banana, peeled Empty pudding mix into a 2 quart microwave safe bowl. Drain pineapple over a 1 cup measure. There will be about 1/3 cup juice. Add orange juice to make 1 cup. Add to pudding. Add milk; stir to combine. Microwave on HIGH 3 1/2 minutes. Stir. Microwave on HIGH 1 minutes; stir. Microwave 1 1/2 minutes or till mixture comes to a full boil. Stir again. Let stand at room temperature 15 minutes; stir twice. Slice banana into thick slices. Add all fruit to pudding mix and stir. Cover with plastic wrap and chill or serve warm. |
