CORNMEAL COOKIES 
3/4 c. fat, butter
3/4 c. sugar
1 egg
1 1/2 c. flour
1/2 c. cornmeal
1 tsp. baking powder
1/4 tsp. salt
1 tsp. vanilla
1/2 c. raisins, optional

Mix fat and sugar in large bowl. Add egg and beat well. Add rest of ingredients and mix well. Drop dough from a teaspoon on a greased baking pan. Bake at 350 degrees about 15 minutes until lightly brown. Makes about 3 dozen.

Variation for Chocolate Cornmeal Cookies: Use above recipe and mix 1/4 cup cocoa into cookie dough with rest of dry ingredients. Add 1/4 cup fluid milk.
