BRAN MUFFINS 
3 c. Bran Flakes
1 c. boiling water
2 eggs
1 c. honey or sugar
2 c. yogurt
1/2 c. unrefined oil
1 c. whole grain flour
1/2 c. soy flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
1 c. raisins

Mix together bran and boiling water; add honey, oil, yogurt and slightly beaten eggs. Mix all. Add dry ingredients. Add vanilla and raisins last. Place in paper cups that have been placed into muffin tins. Bake at 375 degrees for 15 to 20 minutes. Serves 24.
