BUTTERMILK OATMEAL MUFFINS 
1 c. oats
1 c. buttermilk
1 c. whole wheat flour
1/2 tsp. salt
1/2 tsp. baking soda
1 1/2 tsp. baking powder
1/2 c. oil
1/2 c. sugar
1 egg, beaten

Combine oats and buttermilk, let sit for 30 minutes. Sift flour, salt, soda and powder. Add oil, sugar and egg to oat mixture and mix well. Combine with dry ingredients and mix lightly. Grease muffin tins, bake at 350 degrees for 25 minutes.
