ZUCCHINI CAKE 
3 eggs
2 c. sugar
1 c. oil
2 c. flour
2 tsp. baking soda
3 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
2 c. chopped zucchini squash
3 tsp. vanilla
1 c. chopped pecans

Cream eggs, sugar, oil; mix dry ingredients and add to mixture. Add vanilla, zucchini and melt. Bake 350 degrees for 1 hour in Bundt cake pan.

GLAZE:

1 c. powdered sugar
1 tsp. vanilla
1/2 c. water

Pour over hot cake. NOTE: Option to cook 45 minutes in 13 x 9 inch pan.
