ALMOND BRITTLE 
1 1/2 c. sugar
1 c. white Karo syrup
1 lb. raw almonds
1/2 tsp. salt
2 tbsp. butter
1 tsp. baking soda

1. Combine sugar and Karo syrup in iron skillet or other heavy skillet. Stir with wooden spoon over medium heat until dissolved.

2. Add nuts and salt.

3. Stir constantly until mixture is amber on side of skillet. (At this point, sugar is beginning to burn, which gives this candy its flavor.)

4. Add butter and blend. Turn off heat and add soda quickly. Stir vigorously.

5. Turn immediately into well greased and warmed cookie sheet. When cool, break into pieces.
