HANNA ERICKSON'S OATMEAL COOKIES 
1/2 lb. shortening (any combination of butter and Crisco)
1 c. sugar
1 c. flour
1 tsp. baking soda
2 c. oatmeal (quick oats)

Mix well all ingredients in bowl. Make balls the size of a nickel. Bake approximately 10 minutes at 350 degrees on an ungreased cookie sheet. These are very light and delicate tasting, not your usual oatmeal cookie!
