HAWAIIAN BANANA BREAD 
1 1/4 c. sifted flour
1 c. sugar
1/2 tsp. salt
1 tsp. baking soda
1/2 c. vegetable shortening
3 sm. ripe bananas (enough to make 1 c. banana puree)

Sift dry ingredients into a bowl. Combine shortening and dry ingredients as you would for biscuits. Puree or liquefy bananas in blender; add to flour and shortening with beaten eggs (if you are using blender, place shortening, bananas, and eggs in it; beat to an emulsion). Fold liquid ingredients into dry ingredients VERY QUICKLY, do not overmix. Pour into 9 x 9 inch greased and floured pan. Set pan down with a thump to remove stir holes. Bake 40 to 45 minutes at 350 degrees. Cool 5 minutes before removing from pan.
