VEAL PAPRIKA 
1 lb. boneless veal stew meat
3 tbsp. fat
2 med. size onions, diced
1 tbsp. imported paprika
1 tsp. salt
1/4-1/2 c. water
1/2 c. sour cream

Melt fat in a heavy skillet. Add meat and cook and stir over moderate heat, until meat is lightly browned. Add onion and cook until yellow. Add paprika, salt and water. Simmer covered until meat is tender, about 1 hour or longer. If necessary, add more water from time to time.

When meat is done, and just before serving, fold in sour cream mixed with a little flour. Bring to serving temperature and adjust seasoning and serve at once. This will serve 4.
