FLAN 
1 c. sugar

FOR CUSTARD:

5 eggs
1 can (13 oz.) evaporated milk
1 tsp. vanilla
1 1/4 c. sugar

1. Preheat oven to 350 degrees.

2. Evenly distribute 1 cup sugar into a 6-8 inch pie pan.

3. Put pan under the broiler flame until it melts and turns brownish. Watch carefully. Caramel can burn easily.

4. Gently beat eggs, milk, vanilla and sugar together.

5. Pour mix over the caramel in pan.

6. Place the caramel pan into a larger pan with water. Bake for 45 minutes. Custard is done when golden in color and knife inserted in center comes out clean.

7. Let cool. Cover with a serving plate and carefully turn flan onto the plate.
