CUCUMBER AND SPINACH SALAD 
2 large cucumbers, peeled and sliced thin
1/2 c. sour cream
1 tbsp. lemon juice
1 tbsp. apple cider vinegar
1/2 tsp. salt
2 tbsp. chopped chives
spinach and endive lettuce leaves

In a small bowl, combine sour cream, lemon juice, vinegar, salt and chives. Pour the dressing over cucumbers and gently mix to coat. Cover the bowl and chill 2 hours to overnight. To serve, spoon cucumber mixture over spinach and lettuce leaves.

Yield: 6 to 8 servings.
