GREEN TOMATO CHOW-CHOW | |
5 lbs. green tomatoes, chopped fine 2 qts. onions, chopped 2 green bell peppers 2 red bell peppers 2 1/2 lbs. light brown sugar 1 1/2 qts. white vinegar 1/2 box pickling spices 1 c. salt Cut tomatoes, onion and peppers up into small pieces. Combine together. Add 1 cup salt and cover with water. Let stand overnight. Next morning drain and rinse thoroughly. Tie spices into a thin white cloth. Put spices, sugar and vinegar together. Bring to a boil for 10 minutes. Remove spices. Add tomatoes, onion and pepper mixture. Boil until color changes, about 10 minutes. Put into jars and seal. |
