RHUBARB CRUMBLE 
2 c. chopped rhubarb
1 c. Quaker Oats
1 c. sugar, divided
1/2 tsp. salt
1 tsp. cinnamon
1 stick butter

In medium bowl combine Quaker Oats, 1/2 cup sugar, salt, cinnamon, and butter and mix until soft and crumbly. Divide mixture in half. Pat half of mixture into bottom and sides of an 8 inch pie plate to form a crust.

In separate bowl mix rhubarb with remaining 1/2 cup sugar. Spread rhubarb over pie crust. Use remaining dough mixture to form top pie crust. Bake in preheated 350 degree oven for 30-45 minutes or until pie is golden brown.

NOTE: Delicious served with vanilla ice cream.
