SPINACH BALLS 
4 pkgs. chopped frozen spinach
4 c. herb stuffing
2 lg. onions, diced
8 eggs
1 c. Parmesan cheese
1 1/2 c. melted butter
1 tbsp. thyme
2 garlic cloves, minced
Salt & pepper

Cook spinach, drain and squeeze well. Mix all ingredients. Chill at least 2 hours, even overnight. Roll into balls and place on cookie sheet to freeze. Put into plastic bags. Keep frozen until ready to use. To cook, place on cookie sheet. Allow 30 minutes to thaw. Bake at 300 degrees for 30 minutes until golden brown.
