EGGPLANT DRESSING 
1 lg. eggplant
1 bell pepper
3 slices bread
Salt
2 lg. onions
Bread crumbs
3 hot peppers
Oil
Pepper

Boil eggplant, cool, scoop out the inside. Chop onions fine. Saute onions, add eggplant and bell pepper with hot peppers. Cook for 5 or 6 minutes.

Soak bread in water. Squeeze water out of bread. Add eggplant mixture. Cook and stir for 10 or 15 minutes more. Season to taste with salt and pepper.

Place in casserole dish. Sprinkle heavily with bread crumbs. Bake at 350 degrees for 35 minutes or until bread crumbs are nice and brown. Serves 4.
