CHICKEN RICE SOUP 
1 qt. chicken broth
1/3 c. uncooked rice
1 c. diced cooked chicken meat
Salt and pepper to taste
2 tsp. minced parsley
2 carrots, diced
3 celery sticks, diced

Bring broth to a boil in a large saucepan. Add rice, chicken, carrots and celery. Simmer uncovered for about 10 minutes. Add salt and pepper to taste. Stir in parsley and serve.

This is a great low calorie meal. Approximately 70 calories a bowl.
