EASY FISH FLORENTINE 
1 lb. fresh or frozen fish
1 (12 oz.) pkg. frozen spinach souffle (thaw)
1/3 c. crushed round crackers (about 8)
2 tbsp. toasted wheat germ
2 tbsp. grated Parmesan cheese
Lemon wedges (optional)

Thaw fish if frozen. Arrange fillets in a single layer in a 12 x 7 1/2 x 2 inch baking dish. Spoon thawed spinach over fish.

In small mixing bowl stir together crushed crackers, wheat germ and cheese. Sprinkle over all.
