TOM'S QUESO 
5-6 oz. water
1 lb. American cheese, cut into chunks
1 sm. tomato rinsed to remove acid (may use canned diced)
2 tbsp. green pepper, finely chopped
1 1/2 tbsp. onion, diced
1 scant tsp. cayenne pepper
1 scant tsp. salt
1/4 tsp. each cumin, pepper, oregano, powdered garlic

In top of double boiler over simmering water, melt cheese with water until a nice creamy consistency (slow and easy the best way). Add vegetables and spices; mix well. Good idea to keep warm in chafing dish or fondue pot. Serve with Nacho chips.
