NEW ENGLAND PUMPKIN PIE | |
12 oz. pumpkin 1 tbsp. cornstarch 1/2 tsp. salt 1 tsp. cinnamon 1 tsp. ginger 1/2 tsp. nutmeg 1 1/2 tbsp. melted butter 1/2 c. brown sugar 1/2 c. white sugar 1 1/2 c. evaporated milk 1/8 c. molasses 2 eggs, well beaten Sift sugars, cornstarch, salt, and spices together. Mix with pumpkin. Add beaten eggs, milk, molasses and butter. Add dash of lemon juice, if desired. Prepare a 9-inch pie crust, pour in contents. Bake for 15 minutes in a preheated 450 degree oven, then reduce heat to 350 degrees. Bake for 50 minutes or until a silver knife inserted in center comes out clean. |
