CHICKEN ENCHILADAS | |
3 whole chicken breasts 2 pkgs. Jack cheese 1 can chopped green chilies 1 pt. half and half 1 med. onion 1 pkg. soft flour tortillas Bake chicken breasts at 325 degrees for 45 minutes. Cut up or shred into large bowl. Add 1 package Jack cheese, onion and chilies and 1/2 of the carton of half and half. Stir very well. Add salt and pepper to taste. In baking dish, 9x13, roll up mixture into tortillas, approximately 3/4 cup for each roll. Shred remaining package cheese and layer over rolls. Pour remaining half and half over all before baking. Bake at 350 until light brown and bubbly. |
