COUNTRY MEATLOAF 
1 tbsp. salad oil
1 med. onion
1 celery stem
3 slices wheat bread
2 lb. lean ground beef
1 lg. carrot, shredded
1 tsp. salt
1/4 tsp. pepper
1 egg
1 (8 oz.) tomato sauce
1 tbsp. brown sugar
1 tbsp. vinegar
1 tbsp. prepared mustard

Cook onion and celery in oil, approximately 10 minutes. Tear bread into small pieces. Add beef, carrot, onions, celery, salt, pepper, egg and 1/2 can tomato sauce. Mix thoroughly. Shape into loaf.

Combine brown sugar, vinegar, mustard and remaining tomato sauce. Spoon over meat loaf in baking dish. Bake at 350 degrees for 1 1/2 hours.
