FETTUCINI ALA AMY | |
1/2 lb. unsalted butter 2 cloves fresh garlic, crushed and minced 1/2 c. chopped fresh parsley 1/2 tsp. black pepper 1/2 c. heavy cream 1/2 c. freshly grated Parmesan or Romano cheese 1 lb. regular fettucini or spinach fettucini (florentine), cooked al dente Over a low heat, melt butter, add garlic. DO NOT BROWN. Cook 2 minutes. Add parsley and pepper. Gradually stir in cheese in small portions. Add cream and cook 1 to 2 minutes. Serve over fettucini. VARIATIONS: Add 1/2 teaspoon crushed red pepper flakes, chopped mushrooms or sauteed chopped ham bits. |
