6 med. size sweet potatoes 6 tbsp. butter, unsalted 1/2 c. firmly packed brown sugar Salt and pepper Cook potatoes in boiling salted water in a large saucepan, partly covered, about 20 minutes, just until tender. Drain and peel and cut lengthwise. Butter a 13x9x2 inch baking dish with 2 tablespoons of the butter. Arrange potatoes in dish, sprinkle with salt and pepper. Sprinkle or sieve brown sugar evenly over. Dot with remaining butter. Bake in moderate oven 375 degrees for 15 minutes. Turn carefully, continue baking 15 minutes longer, or until they are evenly glazed. |
