CLASSIC CHICKEN DIVAN | |
2 bunches fresh or 2 (10 oz.) pkgs. frozen broccoli 1/4 c. flour 1/4 c. butter 2 c. chicken broth 1/2 c. whipping cream or Half and Half 3 tbsp. cooking sherry 1/2 tsp. salt 1/4 c. grated Parmesan or Romano cheese 3 chicken breasts, cooked (steam them in a vegetable steamer just until done) I usually double the recipe. Steam chicken breasts first and set aside to cool before removing pieces from the bone. Steam broccoli to desired crispness or tenderness. Drain and set aside. Melt butter to bubbling point, but not brown. Add flour gradually and stir constantly with wire brush. Add chicken broth, cook and stir until thick. Stir in cream or Half and Half, salt, dash of pepper and then add grated cheese. Place chicken pieces and broccoli pieces in any order in square or rectangular baking dish. If I double the recipe I use a 13 x 9 x 2 inch baking dish. Pour sauce over chicken and bake uncovered in 350 degree oven for 20 minutes or until hot. |
