STRAINED CARROT CAKE 
4 eggs
2 1/2 c. unsifted flour
2 tbsp. wheat germ
2 c. sugar
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1/2 c. vegetable oil
3 jars (4 1/2 oz. size) strained carrots
1/2 c. chopped walnuts

Preheat oven to 350 degrees. Grease 15 1/2 x 10 1/2 inch pan. Beat eggs. Add sugar. Add flour, wheat germ, cinnamon, baking soda, salt, oil and carrots. Beat first add low speed then at high speed, until well mixed. Stir in nuts and bake 30-35 minutes.

CREAM CHEESE FROSTING:

2 pkg. (3 oz.) cream cheese, room temperature
4 tbsp. butter, softened
1 3/4 c. confectioners' sugar
1/4 tsp. vanilla

Beat at medium speed then high speed until smooth.
