MARINATED CHICKEN BREASTS 
MARINADE:

4 tbsp. soy sauce
4 tbsp. oil
4 tbsp. cooking sherry
2 tbsp. lemon juice
1 tbsp. brown sugar
1/4 tsp. ginger
6 cloves
Garlic powder

Mix together and pour over boned and skinned chicken breasts. Place in refrigerator overnight. Cook on grill or broil in the oven. Serve on a bed of brown rice.

BROWN RICE WITH MUSHROOMS:

1 c. brown rice
1 can sliced mushrooms
2 tbsp. butter
1/4 c. chopped red pepper
1/4 c. chopped onion
2 1/2 c. chicken broth
Salt & pepper to taste

Mix all ingredients in a microwaveable bowl. Cover with plastic wrap and cook on high for 8 minutes in the microwave. Stir and cook 4 minutes longer or until rice is soft. Let it set covered for 5 minutes, then serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
