1/2 onion, diced 2 tbsp. olive oil 1 tsp. parsley 1 sm. can tomato sauce 1 (16 oz.) pkg. cut green beans 1 (16 oz.) pkgs. peas and carrots 3-4 ribs celery, diced 1 lg. potato, diced 1/2 to 1/4 lb. sm. pasta Saute onion in oil. Add parsley and tomato sauce; simmer for 2-3 minutes. Add all vegetables, except potato. Add water to cover. Salt and pepper to taste. Simmer 10 minutes or until vegies are tender, but not soft. Add potato; simmer until cooked. At this stage, soup freezes well. When ready to serve, cook pasta, drain, and add to soup. |
