PLUM PUDDING
2 c. dates
3 c. flour
1 c. granulated sugar
1/2 tsp. salt
1 tsp. baking soda
2 tsp. baking powder
1 c. butter, melted & cooled
4 eggs
1 c. buttermilk
1 tbsp. orange juice
1 c. chopped nuts

Mix cut up dates into flour until completely covered. Stir in sugar, salt, baking soda and baking powder. Beat eggs. Add buttermilk and orange juice. Add to dry mixture along with butter. Beat 1 minute on medium speed. Reduce speed to low and add nuts. Bake in greased 10" angel food cake pan for 1 hour in center of oven in preheated 350°F oven.

TOPPING:

1 c. sugar
1 c. orange juice

Mix well sugar and orange juice. Have ready and pour slowly over pudding when removed from oven. Let set in pan until cold. There are no plums in it, so don't ask me why it's called Plum Pudding.

 Kristina (New York) says:
It's called Plum Pudding because it used to be spelled "plumb". It was cooked wrapped in cloth so when done it was "plumb" with the outside of whatever you cooked it in.

 Jbarber (North Carolina) says:
My anglophile mum says it is called plum pudding because when baked in a bowl, in the traditional manner, it comes out shaped like a plum.
