JAMBALAYA 
1/4 c. oil
1 med. onion, chopped
3/4 lb. kielbasa, in 1/2" slices
1 green pepper, chopped
1 med. tomato, chopped
1 clove garlic, minced
1 lg. bay leaf
1/8 tsp. thyme
1 tbsp. minced parsley (can use dried)
6 c. beef stock
1/2 tsp. black pepper
1/4 tsp. cayenne pepper
1 1/2 c. rice
Salt to taste

Have all ingredients chopped and ready to go before cooking. Saute onions in oil. When clear add sausage and green pepper and continue sauteing until pepper is tender. Add all other ingredients except rice and bring to boil. Add rice and again bring to a boil, cover and reduce heat to a simmer. Continue cooking until liquid is absorbed. Serves 3-4 easily. Use chicken broth for Jambalaya with chicken or seafood.
